Hacendado salmorejo is a new product that is not available in all Mercadona supermarkets. When we asked the customer service telephone number (900500103), we were told that it was only going to be available in the south and east. Its manufacturer, like the gazpacho and the refrigerated juices, is the Valencian company DAFSA.

Quinoa has gluten

As we have already mentioned in the introduction, we use fleshy tomatoes with low water content, which we are going to drain. We wash and dry them well. We cut them into eighths and sprinkle with half a teaspoon of salt. Stir well.

Place the chopped tomatoes on a large colander and place it over a bowl. Let drain for 10-15 minutes or until it loses the water it contains. Press from time to time to help them release their juices (which we can save for another preparation), while stirring.

We introduce in the glass of a blender or food processor together with the peeled garlic clove (if we like it soft we can use half), a teaspoon of vinegar (in case we use it) and half a boiled egg. We reserve the other half for the moment of serving.

Eroski gluten free

As with gazpacho, it is best to prepare salmorejo at home and choose the healthiest ingredients. In any case, in the market we have different options of salmorejo that we can buy. As we did with gazpachos, we have analyzed the ingredients and nutritional values of these salmorejos.

The reality is that, unlike gazpachos that were very similar in general, there are many varieties of salmorejo. There are differences in the type of bread, in the vegetables used, in the quantities of the ingredients, etc. The particularity that we find in all of them is that they include vinegar, although the traditional salmorejo recipe does not.

The salmorejo of the Garcia Millán brand is probably the one we could consider the least healthy in terms of ingredients and nutritionally speaking. This is due, on the one hand, to the fact that it contains sunflower oil and, on the other hand, to the fact that it is the highest in oil in general.

In the case of La Huerta Don Simón salmorejo, it is one of the salmorejo with the highest oil content of the 12 we have analyzed. Specifically, it contains 7.5% oil. In any case, it is extra virgin olive oil. It is not surprising, therefore, that it is also one of the highest in calories (100kcal) and fat (7.5 g).

Rice is gluten free

Today I want to tell you about the gluten free products in Mercadona that I like the most. I have not included all the products as there are some that I don’t usually buy. However, this is my selection of favorites. Nor have I included obvious products such as fruit, fish or meat.

Hummus: I have yet to make my own hummus; I know it is very easy and it will have olive oil in it. But in the meantime, this option is very practical, with some carrot sticks, peppers and cherry tomatoes, you have a perfect appetizer.

Gnocchi al Pesto: Since I discovered them, I usually keep them in the fridge. I was told by a follower on instagram that they were very tasty grilled with a little oil instead of boiling them. She’s not wrong! They are perfect for a quick dinner or lunch.

Pedrosillanos Chickpeas: Whether to make a gluten free chickpea and noodle soup in my Slow Cooker or for salads or to make hummus. I also usually buy pinto beans to make Mexican food.

Pizza bases: While I usually make the homemade pizza base, I usually have a couple of pizza bases from Mercadona in the freezer. At home we like them with sliced tomato, ham and cheese. I also love them with thinly sliced zucchini, onion and goat cheese.
